How To… Create Jaffa Cakes At Home

Discover tibits’ recipe for vegetarian Jaffa Cakes

Is the Jaffa Cake a cake, or is it a biscuit? The subject of debate for many years, what we can agree on is that these little treats are utterly delicious. If you are as fond of the chocolate-covered Jaffa Cake as we are, now is a brilliant time to discover how to create your own. We have enlisted the help of the chefs behind Heddon Street’s vegetarian restaurant, tibits to share their culinary secrets. Find a step by step recipe guide below:


  • 250g flour
  • 170g sugar
  • 7g baking powder
  • 6g baking soda
  • 1tsp salt
  • 5g vanilla sugar
  • 300ml soya milk
  • 125ml rapeseed oil
  • 1.5tbsp balsamic vinegar
  • 2.5tbsp freshly squeezed orange juice
  • 150g good quality dark chocolate
  • 120g coconut milk
  • 300g orange marmalade (see here for the marmalade recipe)



  • Heat the oven up to 180°C. Prepare a baking tray with baking paper.
  • Mix flour, sugar, baking powder, baking soda, salt and vanilla sugar in a bowl.
  • Add the rapeseed oil and soya milk and stir.
  • Add the vinegar and mix it well with a rubber spatula. As soon as the mixture for the base is combined, pour into the tray and cook in the oven for 20 to 30 minutes at 180°C. Let the base cool in the baking tray.
  • In the meantime, bring the orange juice and sugar to boil in a small pot.
  • Place the chocolate in a bowl, heat up the coconut milk and pour the hot milk over the chocolate. Let it melt for 1 minute, then mix it well with a rubber spatula.
  • Pour the orange juice equally over the biscuit and let it soak in.
  • Carefully spread out the marmalade on the biscuit, and then cover it with the warm chocolate.
  • Let it cool, then take it out of the baking tray.
  • Cut into pieces (squares are easiest) and serve.
