About Alex Dilling
Chef Alex Dilling is a London-born culinary talent with a transatlantic upbringing, trained at Westminster and honed under French master Alain Ducasse in New York. He led Caviar Russe to its first Michelin star in 2013 and helped maintain two stars at The Connaught and The Greenhouse in London. In September 2022, he launched Hotel Café Royal and earned two Michelin stars within six months.
About Merlin Labron-Johnson
Growing up in south Devon, Merlin was always surrounded by organic and sustainable farming. His parents – a poetry writer and museum curator – always made sure there were good organic vegetables and wholesome food on the table. After six years working in Michelin-starred restaurants in Switzerland, France and Belgium, Merlin Labron-Johnson returned to the UK to open Portland. Nine months later, he was awarded a Michelin star at just twenty-four years old. Now he can be found in Bruton, Somerset, with his restaurant Osip, which was awarded a Michelin green star in 2023.
