About Rafael Cagali
Chef Rafael Cagali first started cooking when he moved from São Paulo to London. He then trained at Westminster and went on to some of the world's most lauded kitchens, including Quique Dacosta and The Fat Duck. In 2019, Rafael opened Da Terra, which earned its first Michelin star within eight months and its second in 2021. Blending global fine-dining experience with the warmth of his Brazilian and Italian roots, Rafael brings a deeply personal and innovative approach to cuisine.
About Alex Dilling
Chef Alex Dilling is a London-born culinary talent with a transatlantic upbringing, trained at Westminster and honed under French master Alain Ducasse in New York. He led Caviar Russe to its first Michelin star in 2013 and helped maintain two stars at The Connaught and The Greenhouse in London. In September 2022, he launched Hotel Café Royal and earned two Michelin stars within six months.
