Unlock the power of Adaptogens with The Herbtender at Brityard

Guided by The Herbtender’s Chief Herbalist, Schia Mitchell Sinclair, enjoy an evening exploring how food can do more than nourish - it can shape how we experience the world around us.

This immersive evening begins with a talk introducing adaptogens: traditional herbs and mushrooms long used in food and medicine to support resilience in times of stress. Schia will explore their history, their role in traditional diets, and why reconnecting with diverse, plant-led ingredients is increasingly relevant in modern life.

Following the talk, guests will enjoy a specially curated four-course dinner by Chef Abhilasha Chandak. The menu has been designed as a nervous system journey - moving from grounding and sensory awakening through to nourishment and gentle exhale - with each course thoughtfully incorporating functional herbs and mushrooms.

Throughout the evening, Schia will offer insight into the plants featured, bridging the gap between traditional knowledge and contemporary food culture.

The experience includes two signature Herbtender teas, woven into the evening to complement the natural rhythm of the meal.

An evening of flavour, perspective, and a fresh way of thinking about the role of plants at the modern table.
